This is one of those super easy recipes, I don't remember where it came from, I have had it scrawled in my recipe book for years.
2c flour (I use 1 white, 1 brown)
1tsp baking powder
1/4 tsp salt
Measure all the above into a bowl and combine well.
115g butter, softened
3/4c brown sugar
2 eggs, beaten
525g mashed banana (over ripe ones work well)
Cream the butter and sugar together.
Add in the eggs and mix well.
Add the bananas and combine.
Fold the flour mix into the banana mix, don't over mix.
Pour into a loaf tin, you will need to grease it if it is not silicon.
Bake for 50-60 minutes at 190c
Use the skewer test to check it is cooked, poke a clean skewer into the middle and see if it comes out clean.
Delicious warm but equally good cold, it is lovely and moist and very bananary!
