or rolled omlette. I haven't been making bento's recently but I still make tamago yaki so here is how to do it. This is my mother-in-laws recipe and dead easy. I used a proper omlette pan but before I bought it I used the wok and just cut off the ends of the omlette to make it look pretty!
you will need...
2 eggs
1 tsp sugar
1 tsp soy sauce
1. beat all the ingredients together in a bowl.
2. heat a splash of oil in a pan. (medium heat)
3. pour in about a quarter of the egg into the pan, swirl the pan round so that the egg makes an even layer.
4. when the top of the layer looks cooked, roll the egg over from the back of the pan.
5. slide the rolled egg to the back of the pan and add another layer of egg, repeat the rolling steps until all the egg is used up.
6. when all the egg is cooked and rolled, remove from the pan and allow to cool.
7. once cooled, slice and serve with grated daikon (giant radish/moolie) and a splash of soy sauce or pop a slice of two in your bento.
